    Vitamin B2: Vitamin B2 ili riboflavin je vitamin B-kompleksa koji se primjenjuje u obliku soli topljivih u vodi.Vrlo je čudnog sastava jer se može naći u tjelesnim izlučevinama,to jeste spermi i mokraći,i to u velikim količinama. Često ga nazivaju i faktorom rasta odnosno disanja stanica. Uključen je u metaboličke procese cijeloga tijela te je neophodan u iskorištavanju energije iz hrane. Riboflavin je naračastožuti prašak gorka okusa. Slabo se topi u vodi, a otopina je žute boje. Strukturno gledajući čine ga aloksazinska jezgra i ugljikohidrat riboza. Aktivni je sastojak dva koenzima: FMN - flavin-mononukleotida -čine ga riboflavin i fosfat- i FAD – flavin–adenin-dinukleotida -čine ga riboflavin, dva fosfata i adenin-. Bogat izvor vitamina B2 su jetra, bubreg, riba, jaja, mlijeko, sir, kvasac, zeleno povrće te neoljuštene žitarice. Do gubitka ovog vitamina može doći izlaganjem na suncu te kuhanjem. Preporučene dnevne količine -RDA- za odraslu zdravu ženu su od 1.2 - 1.3 mg, a za zdravog muškarca su od 1.4 - 1.7 mg. Ovaj vitamin također igra važnu ulogu u metabolizmu preko svojih koenzima FMN i FAD. Hipovitaminoza nastaje najčešće nedovoljnim unosom hrane pa može doći do problema sa vezivnim tkivom, noktima i vidom.     Lecitin: Lecitin -E 322- je emulgator za kombiniranje vode i ulja. Biokemijski gledano spada u skupinu fosfatidilkolina, vrste fosfolipida. Dobiva se iz jaja ili soje. Hranjiv je i neotrovan, a koristi se kao dodatak hrani za osobe s oslabljenom funkcijom mozga. No, u nekim slučajevima možda je deriviran iz genetski modificirane soje. Služi kao pričuvni spoj kolina za sintezu acetilkolina. Vrsta lecitina, fosfo-dipalmitoil-fosfatidilkolin -dipalmitoillecitin- -smanjuje napetost površine- ─ kao glavni djelatni sastojak plućnog surfaktanta sprječava adheriranje unutrašnjih površina pluća.     Limunska kiselina: Limunska kiselina, C6H8O7, trobazična je organska kiselina, prisutna u mnogim vrstama voća -u limunovom soku 5–6%-. Spada u grupu hidrokarbonskih kiselina. Bijela je kristalna tvar kisela okusa, lako topljiva u vodi. Industrijski se dobiva iz limuna -u južnoj Italiji i Kaliforniji- ili iz šećera fermentacijom pomoću plijesni Aspergillus niger. Upotrebljava se u proizvodnji bezalkoholnih napitaka i u medicini. Njezine soli su citrati. Normalan je sastojak ljudske krvi i urina -mokraće-. Koristi se u proizvodnji pjenušavih tableta i vitaminskih napitaka -npr. sastojak je Cedevite-, voćnih sokova, smrznutog voća itd... Uzorci krvi i tkiva čuvaju se u otopinama limunske kiseline. U vinarstvu se ponekad ubraja u nehlapljive kiseline. Poželjna u vinu, do određene granice. Prelazak dopustivog praga hlapljivih kiselina javlja se ako se vino dobilo od nezrelog grožđa, vino se onda mora ponekad otkiseliti. Kao međuproizvod ciklusa limunske kiseline javlja se jantarna kiselina.

    Natrijev karbonat: Natrijev karbonat -Na2CO3 x 10H2O, kristalna soda, kalcinirana soda- je bezbojan do bijeli kruti kristal koji se u prirodi nalazi kao mineral soda -Na2CO3 x 10H2O-, trona, tennonatrit, gejlisit, personit i hanksit. Lako se otapa u vodi, a otopina natrijeva karbonata djeluje jako lužnata, zbog hidrolize, i nagriza tkiva. Najvažnije soli ugljične kiseline su natrijev hidrogenkarbonat i natrijev karbonat. Te soli su od izuzetne važnosti u industrijskoj primjeni. Natrijev karbonat bezvodni -Na2CO3, soda bez vode, soda- je higroskopan, a stajanjem na zraku reagira s CO2 i H2O stvarajući NaHCO3. Neutralizacijom natrijeve lužine ugljikovimIV oksidom nastaje natrijev hidrogenkarbonat -NaHCO3- ili natrijev karbonat -NaCO3-, ovisno o odnosu množina reaktanata: Na+-aq- + OH--aq- + CO2-g- --> NaHCO3-s- 2 Na+-aq- + 2 OH--aq- + CO2-g- --> 2 Na+-aq- + CO32--aq- + H2O Uparavanjem otopine natrijeva karbonata, nastaje bijeli prah, dobro topljiv u vodi. Vodena je otopina zbog hidrolize jako lužnata, pa se vrlo često zbog tog svojstva koristi u industriji kao jeftinija sirovina i zamjena za natrijevu lužinu. Kristalizacijom iz otopine nastaju veliki prozirni kristali - kristalna soda -natrijev karbonat, Na2CO3 x 10 H2O-.
