Known under various commercial names, it is a colorant for foods and other substances. It is denoted by E number E133 and has a color index of 42090. It has the appearance of a blue powder. It is soluble in water, and the solution has a maximum absorption at about 628 nanometers.

  • E270 - Mliječna kiselina


    Mliječna kiselina: Mliječna kiselina -ili kiselinaetanska kiselina-, 2-hidroksipropionska kiselina, CH3CH-OH-COOH. Spada u grupu hidroksikarbonskih kiselina. U svojoj molekuli sadrži jedan asimetrični ugljikov atom pa se pojavljuje u dvjema optički aktivnim modifikacijama -D-mliječna i L-mliječna kiselina- te kao njihova racemična, optički neaktivna smjesa -DL-mliječna kiselina-. Tvori bezbojne kristale koji se tale na 25 do 26°C -D-m. k. i L-m. k.-, odnosno na 18°C -DL-m.k.-, pa prelaze u bezbojnu sirupastu higroskopnu tekućinu, vrlo lako topljivu u vodi i alkoholu, teško topljivu u eteru. L-mliječna kiselina stvara se raspadanjem glikogena u mišićima koji su pod opterećenjem i uzrok je njihova umora. D-mliječna kiselina nastaje vrenjem iz šećera i drugih ugljikohidrata djelovanjem anaerobnih bakterija, pa se zato nalazi u kiselome mlijeku, kiselom zelju, siru, siliranom krmivu itd.. Mliječna kiselina idustrijski se proizvodi fermentacijom šećera iz škroba, melase ili sulfitne lužine, a sintetski reakcijom cijanovodične kiseline i acetaldehida, uz kiselinski nitril kao međuproizvod. Rabi se umjesto limunske i vinske kiseline u proizvodnji bezalkoholnih pića, kiselih bombona, u medicini, tekstilnoj i kožnoj industriji, industriji vrenja i dr.. I mnoge soli i esteri mliječne kiseline -laktati- važni su u tehnici i medicini. Tako su npr. natrijev laktat i kalijev laktat nadomjesci za glicerol. Magnezijev laktat blagi je laksativ, etil-laktat hipnotik je i sedativ, a u tehnici služi kao otapalo, titanijev laktat služi za močenje kože itd.. U vinarstvu se ponekad ubraja u nehlapljive kiseline. Vinu daje harmoničnost i pitkost. Poželjna u vinu, do određene granice. Prelazak dopustivog praga hlapljivih kiselina javlja se ako se vino dobilo od nezrelog grožđa, vino se onda mora ponekad otkiseliti. Ako su berbe bile nepovoljne, grožđe je nezrelo pa odgađamo prvi pretok. Tada bakterije i kvasci koje su na drožđu same razgrade jabučnu kiselinu u blagu mliječnu kiselinu -jabučno-mliječno vrenje- te vino postaje mekše i pitkije.

  • E330 - Kiselina limunska kiselina


    Limunska kiselina: Limunska kiselina, C6H8O7, trobazična je organska kiselina, prisutna u mnogim vrstama voća -u limunovom soku 5–6%-. Spada u grupu hidrokarbonskih kiselina. Bijela je kristalna tvar kisela okusa, lako topljiva u vodi. Industrijski se dobiva iz limuna -u južnoj Italiji i Kaliforniji- ili iz šećera fermentacijom pomoću plijesni Aspergillus niger. Upotrebljava se u proizvodnji bezalkoholnih napitaka i u medicini. Njezine soli su citrati. Normalan je sastojak ljudske krvi i urina -mokraće-. Koristi se u proizvodnji pjenušavih tableta i vitaminskih napitaka -npr. sastojak je Cedevite-, voćnih sokova, smrznutog voća itd... Uzorci krvi i tkiva čuvaju se u otopinama limunske kiseline. U vinarstvu se ponekad ubraja u nehlapljive kiseline. Poželjna u vinu, do određene granice. Prelazak dopustivog praga hlapljivih kiselina javlja se ako se vino dobilo od nezrelog grožđa, vino se onda mora ponekad otkiseliti. Kao međuproizvod ciklusa limunske kiseline javlja se jantarna kiselina.

  • E901 - Pčelinji vosak


    Pčelinji vosak: Pčelinji vosak -lat.: Cera Flava- je prirodni vosak koji izlučuju pčele i od njega grade saće. Očišćen i izbijeljen u trgovinama se prodaje pod imenom Cera alba. Prirodna specifična težina kod temperature od 15°C iznosi 0‚956kg. +, - 0‚003kg. Točka topljenja mu je od 58 - 64°C i daleko je veća od običnog parafinskog voska gdje je ona već na 30°C. Na temperaturi iznad 65°C pčelinji vosak postaje tekuć i može se prihvatiti za vlakna stijenja za svijeću. U kontaktu sa zrakom, svijeća gori dajući svjetlost i toplinu. Danas se za proizvodnju svijeća koriste jeftiniji stearin i parafin, koji su gotovo potpuno istisnuli korištenje pčelinjeg voska u toj proizvodnji ne zbog svoje kvalitete već zbog niže cijene. Kao dodatak prehrani pčelinji vosak nosi oznaku E 901. Kad pčela medarica iz žlijezde luči voštane pločice, one su u stvari gotovo bijele boje. Tamnija ili žuta boja se u vosku stvara njegovim kontaktom sa zrakom. Boja ovisi i od prisustva cvijetne peludi te propolisa.
